Glow-Up Dip 

This week on the Blank Slate Blog, we’re bringing you a summer dip that will have you glowing like the sun. This dip recipe is packed with antioxidants, anti-inflammatory compounds and minerals, all essential components for skin health. 

The real star of this dip is beets. Beets are your best friend when it comes to skin health; that’s why we use them in our Glow 02 juice. Let’s talk about a few of the reasons beets are so great for skin health:

Vitamin C

Beets are rich in vitamin C, an antioxidant that assists with everything from preventing wrinkles, to reducing acne, to increasing collagen production.


Inflammation is a normal process of the immune system, but excess and chronic inflammation can eventually damage healthy cells, tissues, and organs. Anti-inflammatory foods, like beets, can help support and balance our inflammatory response over time.


Vitamin C is just one of the many antioxidants found in beets. Antioxidants essentially neutralize free radicals, unstable compounds that cause damage to the body. Antioxidants work synergistically, so consuming foods with a variety of antioxidants is your best bet.

Roasted Beet, Lemon, Walnut Dip


  • 1 medium beet, leaves and stems removed

  • 1 cup cooked chickpeas

  • ½ cup walnut halves

  • ⅓ cup olive oil

  • 1 medium lemon, juiced and zested

  • 1 garlic clove, crushed

  • 2 tbsp tahini

  • 1 tsp balsamic vinegar

  • ¾ tsp pink salt

  • ½ tsp black pepper


  1. Preheat the oven to 375F. Wrap the beet in foil and place it on a baking sheet. Cook for 45-55 minutes until the beet is tender all the way through.

  2. Let the beet cool slightly, then remove the skin. The skin comes off easier the hotter the beets, so just be careful not to burn your hands. 

  3. Add beets, chickpeas, walnuts, olive oil, lemon juice, garlic, tahini, balsamic vinegar and spices to a blender or food processor. Blend until smooth and creamy.

  4. Serve sprinkled with lemon zest and finishing salt.
