Back-To-School Cookie Dough Protein Bars


Fall back into old routines and new habits with these back-to-school Cookie Dough Protein Bars. Breakfast is always touted as the most important meal of the day. We consider it so important that we have two blog posts on the subject, Thanks a Brunch and Bake it Till You Make it. Now, these bars are perfect for breakfast, but they are also the ideal any-time-of-day snack. Packed full of good fats, fibre, and protein, these bars will have you fueled up and feeling good on even your busiest days. Next time you’re in a rush, look to these bars for everything you need to start your day off on the right foot.


Cookie Dough Protein Bars

Makes: 10 bars

Takes: 30 minutes



¾ cup cashew butter
2 tbsp maple syrup
2 tbsp almond flour
⅓ cup protein powder, vanilla or chocolate
¼ cup cacao nibs
2 tbsp chia seeds
¼ cup chocolate chips
1 tsp flakey sea salt



1. Combine cashew butter, maple syrup, almond flour and protein powder. Mix by hand until something resembling a dough begins to form.
2. Add in chia seeds and cacao nibs. Mix until well combined.
3. Line a loaf pan with parchment paper. Press the dough into the pan, spreading it out into an even layer.
4. Melt chocolate chips, and drizzle over top of the bars. Sprinkle with sea salt.
5. Let set in the freezer for 15 minutes minimum.
6. Once set, cut four times to make five long bars. Then cut through the middle to form ten bars in total. Store in the fridge or freezer.
