Essential Breakfast Recipes

Last week on the Blank Slate Blog we were talking all things breakfast. Why you should eat breakfast, and how you can get the most from it. If you haven’t checked out that post yet, give it a read. This week we are complimenting that post with a few of my essential breakfast recipes. 

First up we have my favorite avocado toast topper, Everything but the Bagel Seasoning. This blend of spices and seeds is packed full of protein and healthy fats, ensuring you stay fully satiated till your next meal. Brunch Brownies were designed with accidentally skipping breakfast in mind. They are one of my favorite things to keep on hand for days where I’m on the go. Spread a little almond butter on one and you’ve got the perfect treat to keep you going. Last but not least, we’re bringing you the ultimate breakfast recipe to help you level up, Woke Kofe Overnight Oats. Woke Kofe is the perfect breakfast blend, but if you’re ever looking for something a little more hearty, then this is the recipe for you. Let’s get into it.


Everything but the Bagel Seasoning

Makes: 1 cup 

Takes: 15 minutes

Lasts: 1-2 months


  • ¼ cup sesame seeds

  • ¼ cup black sesame seeds

  • 3 tbsp caraway seeds

  • 2 tbsp poppy seeds 

  • 2 tbsp onion flakes

  • 2 tbsp garlic flakes

  • 2 tbsp dried parsley

  • 1 tbsp flaked sea salt


  1. Heat a heavy-bottomed pan over low heat.

  2. Add in sesame, caraway, and poppy seeds. Toast for 5 minutes, stirring throughout. 

  3. Remove from heat and let cool.

  4. Mix in the remainder of the ingredients. 


Brunch Brownies

Makes: 8 Brownies

Takes: 45 minutes

Lasts: 7 days refrigerated


  • ⅓ cup coconut oil

  • ½ cup chopped nuts

  • ¾ cup almond butter

  • ⅓ cup maple syrup

  • 2 tbsp ground flaxseeds

  • 2 tbsp cacao powder

  • 2 tsp vanilla extract powder

  • 1 tsp salt

  • ½ tsp baking powder

  • 3 eggs


  1. Preheat oven to 350F. Line a loaf pan with parchment paper.

  2. Heat coconut oil over low heat until melted. Toast the almonds until lightly browned, about 5 minutes. Strain nuts and set them aside to cool.

  3. Add all ingredients, except the eggs, to the coconut oil. Stir to combine well. 

  4. Add in eggs, one at a time. Whisking thoroughly to combine each egg before adding the next. 

  5. Stir in half of the nuts. Then pour the mix into the lined baking tray. Spread it out evenly.

  6. Sprinkle with the remaining nuts and flakes sea salt.

  7. Bake 18-20 minutes. Let cool then cut into squares. 



Woke Kofe Overnight Oats

Makes: 4 breakfast jars

Takes: 20 minutes

Lasts: 5 days refrigerated


  • 1 cup Woke Kofe

  • ¾ cup rolled oats

  • ¾ cup shredded coconut flakes

  • 2 tsp chia seeds

  • 2 tbsp almond butter

  • 1 tbsp coconut oil, melted

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • ½ cup coconut yogurt or greek yogurt


  1. Combine Woke Kofe, oats, coconut flakes, and chia seeds in a mixing bowl. SLet sit for at least 15 minutes. 

  2. Whisk together almond butter, coconut oil, maple syrup, and vanilla extract. 

  3. Fill jars halfway with oat blend. Spread out the top evenly. 

  4. Add half of the yogurt on top. 

  5. Add half of almond butter blend on top. 

  6. Top jar with 2 tbsp of coconut yogurt.

  7. Optional to top with fruit and more shredded coconut.
